Drying Peppers, making Pepper Powder...

Besides the obvious choice of Japs what other peppers would you put in a smoker? What would a Douglah turn out like??

 
Douglahs are VERY bitter to me when fresh,  but smoking them works wonders.  The bitterness goes away and the smoky flavor from the wood takes over.  In my opinion, that is the only way to use Douglahs.
