Eggplant :growing and cooking

oh --
1 medium eggplant
1 1/4 cup breadcrumbs (put aside 1/4 cup for rolling before frying)
2 cloves garlic, minced
1/4 cup grated Parmigiano Reggiano/Grana Padano cheese
2 tablespoons fresh parsley, chopped
1 egg
salt to taste
olive oil for frying

So it's frying and *after* you shape them. ok... :)
 
There must be parmesan cheese somewhere in the recipe.

That's a misconception, Eggplant Parmesan is a bastardization of the term Eggplant Parmigiana which may or may not have Parmigiano Reggiano. Usually it has mozzarella. Parmesan is America's name for fake Parmigiano Reggiano cheese, but the name of the dish is Eggplant Parmigiana which refers to in the style of Parma, Italy.
