food Eggplants - any recipe ideas?

Hi there,

I have some 6 or so eggplants/melanzanis /berenjenas y in my garden.

How would you prepare them? I have no real clue - so I am extremely open to suggestions for recipes

Eggplant parm is a good one... Don't have a recipe on me but its pretty much like lasagna but with eggplants

yes i got a good one..
slice the eggplant into slices 1/2 an inch thick.. lighty salt them and set aside
make a egg batter to dip the slices in.
mix pancko bread crumbs chipotle seasoned with parmesian cheese. Put the mix on a cookie sheet.
Dredge the slices into the egg batter then coat them in the crumb mix.

here is where the recipe can vary
I like to grill them on tinfoil on the grill till done (5-7 min)

I also do the same coating on chicken tenders.

the other way i do it is to layer the eggplant in a baking dish,
add additional cheese and spaghetti sauce between layers.
top with cheese and bake for 35 min @ 350 deg

Peel yer eggplants and cut em into coins or cubes. Season a cup or two of flour with salt and your favorite fiery pepper powder or flakes. Beat a couple three eggs and add 2 tbsp of water to thin just a bit. Dredge your coins/cubes in the flour, then in the eggs, then back in the flour. Remove the floured eggplants to a plate and then fry them in small batches in canola or peanut oil till golden brown. Remove from the oil and drain on paper towels and then serve them however you like - snack/appetizer with assorted dips OR layer them in a dish and cover with marinara and parmesan/mozzarella and bake till the cheese is melted.
 
I'm with Howard on this one.... fry them! Except I use Italian style bread crumbs instead of Panko.... more flavor. Top the fried slices with marinara and melty provolone
 
thx to all for suggestions ... I will go for frying (dont wanna go overboard with elaborate preparations in the kitchen ;-)

Great thread. I don't use eggplant nearly as much as I should. Usually it's eggplant parmesan, if I buy it, which is seldom. And that's an easy dish to make.

Skin it, slice it into half inch thick rounds, place in lightly oiled casserole dish, top with ricotta (or even cottage cheese), dump sauce in (that's where the work can come in if you are making your own.), stir in some parmesan (fresh grated works better than green cylinder dust), top with mozzarella. In the oven 350 till the cheese on top is starting to brown. (About 20 minutes.) Let rest for about five minutes after baking. Boom!

And that's the simple version off the top of my head. Obviously, there are tons of recipes out there. Google is your best friend.
 
"Fish-fragrant" eggplant (there's no fish in it). It's a Sichuanese recipe for a delicious spicy rich eggplant dish, often called "garlic sauce" or "chili garlic sauce" at Chinese restaurants. You can find many recipes for it online. Supplementing the chili bean paste with fresh chilies is something I do often for more heat without additional salt.
