Elepahant Pepper, Also known as Slonovo Uvo. This serbian sweet pepper is so gorgeous. It is used traditionally to make Ajvar, a thick pepper preserve.  The medium size plants produce in abundance. Very sweet, thick walled pepper. Perfect for roasting or stuffing.

Ajvar is commonly prepared in the fall, making use of the abundant harvest of Elephant peppers, which are charred over a fire, peeled, and combined with roasted eggplant, garlic, oil, and vinegar, for a sauce that can be canned and eaten throughout the rest of the year. It's usually served alongside grilled meats, but can also be enjoyed on its own or as a spread.

Ajvar is one of things that you buy planning on adding it to sandwiches and end up eating it straight from the jar with a dessert spoon. Yum!
