overwintering First season over wintering question

It’s coming to the end of the growing season here in Fuerteventura, although having said that many of the plants such as the Bhut Jolokias, Thai Demons and Dhani’s (my Indian curry favourite) are still flowering and fruiting. My Scotch Bonnets and Habaneros though are starting to look tired and I’m thinking it time to give then a well-earned rest. Can anyone advise the best method of over wintering them, i.e do they just need to be cut back, and if so what is the best approach. Our average winter temperature out here is 21 degrees C, and it never drops below 13 (lowest recorded) in the night so I’m planning on leaving them in their growing location.
