Fresh Veggies?? ( Hotsauce Nube )

Hey everyone I'm new to hotsauce making, I make a hotsauce which uses fresh tomatoes and onions that I want to bottle and give away but I read somewhere that fresh veggies are a no-no for hotsauce? Can I use them or not. I want it to be safe. I just cook down the ingredients then blend them then strain them then bottle it. I've made it for myself for years without issue but I've always kept it refrigerated. I need help / advice. I have never measured PH or anything should I?How about canned tomatoes??

Any nasties that might be in there are going to be killed during cooking and if you process it correctly, read the Hot Sauce 101 thread, you’ll have a sauce that is shelf stable for about 6 months.[/background]
