Good place to start for a hot sauce

Hey all - I was wondering if I could get a little bit of help from the experts in making hot sauces.....I've been perusing the site for a while and have seen tons of hot sauces that LOOK good. I'm a little gun-shy though, I recently tried to make the ghost pepper sauce off of pepperjoe.com(with a few small modifications) and I found it to be lackluster and a little tart for my liking. Again, I modified it. I only had 1 ghost pepper and i used two limes for the juice. It ended up too tart for me and not hot enough.

The question is - are there some recipes that are generally accepted as a "basic" hot sauce or a good place to start? I find myself wishing that the recipe section of this site allowed for ratings/comments similar to allrecipes.com where you could see that people had made it and were happy with it or suggested modifications etc. I have a limited supply of peppers and also limited time or I would spend the time experimenting to find some tastes I like. However, to speed things up I feel like if I can find a sauce or 2 with a good basic flavor then I can find my way from there. Can you guys recommend some recipes for a basic hot sauce and some for a sweet/tropical hot sauce for me to get me in the right direction? Thanks!

Pepperfool.com has quite a few recipes. Just start reading through them, you'll start to see what ingredients show up over and over. And also get an idea of quantities.

I'd suggest first considering the type of sauce you'd enjoy eating. I know it sounds obvious, but there's like 10,000 styles of hot sauce out there. Looking at recipes is good, but to narrow it down, think about the flavors, heat level, texture, and style you'd like to make. Sweet, bitter, fruit, no fruit, fresh or dried pods (or both), roasted or raw peppers, complimentary ingredients like onion, garlic, carrot, to smoke the peppers or not to smoke the peppers, is it a Louisiana-style or a Mexican style or an African style or ?

Just sayin - if you have a good idea of the kind of sauce you want to make it might help narrow the field when you peruse recipes. :cheers:
