Goodies Made

They came out good this afternoon! I have no idea what to do with all the dried bird peppers from '08. That large container of powder represents maybe 10% of my saved and dried crop. lol. It really is one of my favorite mixes though. Nice sharp heat, but not ridiculous.

How many times did you accidently open the grinder too early?
Don't ya just hate it when that happens?
How come your eyes and nose start to itch only when you've just been messing with making stuff out of chiles?

Looks like you made some powder for your coco and soup this winter when that white stuff starts falling from the sky.
 
Chris those look good !! Next year I need to do some of my crop that way instead of freezing everything.

Those look great! Good color and nice looking texture. I really love all of the powder that I make and find that I use them almost everyday.
 
Awesome powders!!!!!!!!!!! You have the makings for nearly any recipe, experiments oh my...you will be having us all drooling from the goodies you make with those. I'm sure each one will add their own flavor. Very,very impressive Chris!
 
Looking good indeed Chris.

I'm a huge fan of pepper powder. You can add it to cooking or use it to season leftovers. So tasty and so versatile.
 
My experience about powdered chillis says that,
Never pack chilli powder in platic jars.
Always use glass jars.
Always keep the chilli powder in dark away from sunlight.

Can you tell us why?

I'm curious....does it lose potentcy or something?

1) Pepper powder loses its color on exposure to sunlight/just plain day time light in a room.

2) Plastics are permeable things. Flavor is not retained for long in plastics to its original potency .

3) Essential oils of pepper reacts with plastics and gives off rancid type/ off flavor after some time.

Plsatics are known to react with contents.

Glass offer immunity from above all.

Darkness retains color.

The knowledge comes at a prize.
It was in 1978 when my small family moved to a suburb of Madras city. My wife was young and had two children and a nut case to look after. I brought whole year's supply of Blood red Reshampatti (double) dry chilli peppers to be powdered and stored. It was about 8 pounds.

We stored it in three large glass jars. Two jars went up the shelf in a very well lit kitchen. The third jar with 2 lbs of pepper powder lasted for about 4 months.

One fine morning, my wife wanted the chilli powder jar from top shelf. I looked everywhere but could not see my blood red chilli powder jars. This was a puzzle. I could see five brown powder jars (we had also powdered CUMIN-CORIANDER 3 jars).
I told my wife that there were five coriander powder jars but no chilli powder jars.
She told me that we had only 3 jars of coriander powder ...then how come we had 5 jars now?
I brought down all the jars . All were brown . Two were slightly darker brown. On smelling them, we found that they were chilli powder jars minus the color.

What had happened was , in strong sunlight and high ambient temperature in top shel near the roof, our chilli powder had lost all its color and most of its smell.

We laughed, cried , blamed each other etc. We had to buy some more chilli peppers and powder them.

Since that time onwards, we used to powder peppers and lock them up in a big metal drum used for storing wheat and rice. (we buy whole years requirement of grains in India).

Another point is that you should grind your pods when needed since whole pods keep their color and flavor a lot longer than powders, and they look cool too.

That sounds like good advise!
Would you keep the peppers frozen until ready to powder?
Or possibly dehydrate and keep in a cupboard?

Hi Larry
I like to keep whole dry pods in jars or airtight containers and store them in a cool dark place. Just grind enough for a few months at a time. You can use those vaccum seal jars too, or add silica gel packs to make sure the pods don't absorb any moisture.
