condiment Grandma's Salsa

Really simple and easy and oh so good, and yes, it really was my grandmother's recipe.

3 qts. Tomato chopped
1 c. Green Pepper chopped
1 c. Onion chopped
1 c. Celery chopped
Hot pepper(s) of your choice and quantity
1/4 c. salt

Mix and refrigerate over night. Next day drain vegetables for 30-60 minutes. Do not mash, just let them drain.

In a sauce pan mix
1 c. white sugar
1/4 c. brown sugar
1 c. white vinegar
1 1/2 tsp. black pepper
1 tsp. Bouquet Garni of pickling spice

Heat to a syrup, add drained veggies and simmer 15 minutes. Once simmered, salsa is ready to be cold packed for 10 minutes.
 
Good post but I could never eat this for 2 reasons...
  1. Green Peppers
  2. Celery
What is the origin of this recipe, sure seems like the mountains around Va. ;) Seems like something my mother's family would put together.
 
I'm wondering if there's a typo when it says " cold packed for 10 minutes"? Sounds more logical that it would be hot packed (ie boiling water bath) for 10 minutes?
