Grumpy's Sizzle

I had one more ferment that was 116 days in and time to process into a sauce I shall call Sizzle.
This ferments was just straight peppers.
1pound mix of Red Moruga's and Carolina Reaper's
1 pound Golden Cayenne

So i added to this some roasted garlic,roasted sweet peppers,cumin,vinegar,sugar in the raw,lime juice,apple cider vinegar,water and simmered it for 30 minutes and blended the crap out of it.
Back in the pot and cooked some more and made some adjustments...cooked for another 20 minutes and back to the blender....this is when I add my 1/4 teaspoon of Xanthan gum.

After I blend in the xanthan gum I return it to the stove and get it back up to temp for bottling.

It does have some heat to it.....I want to wait a week or so to let everything marry together....than I shall do my taste test.

Yes I hope the extra added ingredients helped knock down some of the heat from that Moruga,Reaper mix....i did add 3/4 of a cup sugar in the raw.
