Grumpy's Tropical Jalapeno

Had time today to get this ferment together......this sauce is a huge hit with everyone that does not like a lot of heat....It is my third batch and It goes as fast as i make it.....anyways here's a few pics.....
 
Grumpy's Tropical Jalapeno
 
1 Kilo Jalapenos
Pineapple
Mango
Kiwi
Carrots
Garlic
Onion
Ginger
 
For Starter I used Cutting Edge Cultures.
Brine= 3 TBSP pickling salt and 2 cups filtered water.

Now for the long 100+ days of waiting.
 
It looks really good. For those of us not fortunate enough to have the easy solutions to pineapple and mango ;)  can you tell us how much there is of each?

6oo grams pineapple
454 grams Mango speers
6 Kiwi
 
Its been two weeks for this ferment so far and I really have a lot of activity still....lots of sugars to eat up...smells amazing so far.

These 100 day waiting periods are killer.....but make for nice results.
