Had some dirt left over from a job, so I added it to the garden . Trying to gain more planting space, without increasing the footprint of the garden. Decided on removing the stone border and adding dirt all around to the fence. Figured this will allow for at least 6-8 more plants.

I like the plan.  More peppers is always superior to pretty rock walls.  How are you going to till that in near the rounded fence?  Carefully?
 
Speaking of the fence, I'm sure you think it will keep them from escaping, but you're wrong.  One of these nights, you'll wake up for seemingly no reason and find a cute little Aji Lemon Drop sitting there...watching you sleep.  You'll blink your eyes and it will be gone.  Was it even there?  The next morning the plant will be in your garden looking all innocent, but you will start to wonder.  "Did I plant this here?  I thought this was a Red Bhut.  Did I even plant Lemon Drops at all this year?  Wait.  Where exactly is my Red Bhut?"  Too late.  That's how they get you...
 
Looking good! Do you compost and or save leaves etc. to build the soil? Anything you add well improve the tilth. I've made good garden soil from clay and from sand. Clay is easier. Sand tends to consume all the goodies until they reach the bottom, which in this place I'm at is about 2', so it takes longer. It's like it eats everything until it's belly is full. OK rambling now...LOL
 
So with the current size of your garden; adding some composted cow, or any kind of manure, shouldn't break the bank. Just throwing that out there after you mentioned the clay.

Yes, got a compost pile going for the first time. Today, went out there to turn the pile and fire ants came out and attacked me. I'm not liking composting at the moment lol
 
I will most definitely add some manure or mushroom compost to the vegetable garden. The compost pile dirt, if the ants let me, will go in flower beds in front of my house which is mainly sand, which I do find difficult to amend. I actually started to just remove some  sand last year.

Can't wait to see it full of green!  Sounds like
you have a bit of work to do in the landscape
department... I always liked that sort of thing.
