Has anyone done cherries in a sauce?

Cherries are in season big time here in phoenix.. and very cheap at 1.25/lb so any suggestions for sauces? and can i freeze them for use latter without any issues? I was thinking bhuts and dark sweet cherries would be a good mix for jelly or possibly a sweet sauce for a glaze.
 
Any ideas?
 
yes, cherries are a great ingredient in sauces, many have usedthem, cherries dry and freeze well, beyond that....it's y up to your tastes as to how you want to use them in sauces.

yeah 108 deg F with 5 % humidity  this weekend .. but i will be on the beach in calif.. i planted my peppers on the shady side of my house and they are on a drip timer.. so no worries
 
I am thinking that replacing the onions and carrots in fermented hot sauce with fresh pitted and chopped cherries might make for a great sauce.
 
Might even keep out the garlic and basically just use nothing but hot peppers, cherries, sea salt and water in the ferment mash.

with the right chiles....it sounds good.....  definitely a red chile, and maybe mix some red bells in there with the hots????  Just an idea~
 
I need to call a guy I know and see if I can pic some!!!  well maybe next week LOL..  It's 102+ the next few days and Saturday might be 115F so I think I will say in the shade as much as I can!  A hot pepper cherry  sauce, sounds really good to me for cooking pork or turkey!!  Yum!!!
