Ok, I finally got to trying this sauce. I used it liberally on fresh wood-fired personal pizza from our work cafeteria (we have a great cafeteria!)
I suck at reviewing, but here are my impressions on a 5-star scale:
1. Appearance - this sauce looks great. Some seeds scattered in there, but I kinda like that. The seeds may turn some off, but I'm going 4.5 stars anyway. It's thick and has a great almost deep crimson color to it and I love the stylized skull on the label.
2. Smell - really aromatic. Great smell. Smells vaguely of jerk-sauce, which may be why it's called tear-jerker. It's got the nice Caribean/island heat smell to it. Really like the smell. Solid 5 stars on the smell - it smells like something you want to put in your mouth. I didn't smell the vinegar, nor was there a "danger" smell to it like many superhot sauces have.
3. Flavor - really fantastic flavor - The tomato and cider vinegar really compliment the Bhuts and it makes for a really nice taste. Good sweetness to it as Jerret said, but that is quickly overpowered by the blunt force of the Bhut heat. I'm going with 4.5 stars on the flavor. Don't get me wrong - it's a 5 star flavor, but it's really quickly overpowered by heat so I just don't taste it long enough. Please consider this a personal preference and not anything negative about the sauce.
4. Heat - this stuff's pretty hot. 7-8/10 to my tastes. Hotter than the hottest sauce I make for sure. The Bhuts have an ass-kicking & lingering quality to them that really gets you. Nice immediate heat and it builds. It also lingers both on the tongue and the lips and a little bit in the back of the throat - it teeters on unpleasant, but never quite hits the "uncomfortable" phase - more like it teases you into that "oh crap!" moment when you think you may have put too much onto 1 bite and you're thinking it's going to be too hot...then it settles down a touch and lingers nicely. going with a 4.5 on the heat level.
5. Accessibility/versitility - I'm not a superhot guy, and I tend to avoid superhot sauces. This is absolutely NOT one to avoid. Quite the opposite - it is highly recommended. I will gladly consume this entire bottle in the next 2-3 weeks (or 2-3 BBQ's with friends, whichever comes 1st). That said, this is not a sauce for n00bs or the capsaicin averse - it is very, very hot for a food product. I say that because it's not a "ruin your food" hot, which is what I look for in a hot sauce. So in that regard, I'll give it 4 stars on accessibility, as people who like hot things will be able to take this heat level. Anyone looking to "graduate" from a Tapatio or a Sriracha to something hotter without killing themselves it going to love this stuff. But to someone who finds Tobasco hot, this will likely not be their thing. I found it very accessible and would use it on:
Pizza, beef, chicken, fish, as a suppliment in chili or stew to heat it up, etc. Very versitile but the distinct flavor may not be all things to all foods which is fine - hardly a negative. I am comfortable giving a 4 star rating for this category.
All told in my improvised ratings above it averages to a rock solid 4.5 out of 5 stars. I'm a huge fan and this is a must for any hot pepper fan/foodie's collection.
I can't wait to try the original (white label) Tear Jerker!
