Hello fellow Pepper heads

Greetings. I have always been a fan of hot sauce and then a few years ago got the bug to make my own. Also into pickling, making kimchi and sourdough bread, having fun with learning al this stuff.
I learned of the chiltepin pepper just a couple years ago and it has become my favorite go to. Living in NY I can't grow it, I buy the dried ones off Amazon and then grind em up and put it in a shaker. Such an awesome flavor.
Sometimes my ferments go sideways, so I found this site to help me with what I am doing wrong.
