I figured I should stop reading old threads and join up. I've been making salsas for years. Connecting with a new employee who grows lots of peppers indoors and makes amazing sauces has got me started on broadening my culinary range with hot sauces. I'm a fan of the super hots. Have done a couple of hot challenges and survived. My place is too small and packed with people and pets to grow indoors, so I buy a lot of fresh and dried hots online. I just made my first small batch fermented mash (moruga scorpions and garlic) and created a sauce yesterday after 5 weeks of fermentation. There were some hiccups with kitchen devices in the end, but it was a success nonetheless and I've learned some lessons.
The farmers markets here in Seattle (when they are going) have started to broaden their pepper range a little bit too, so that's exciting.
So I'm really hear to have fun, learn more techniques, learn about more peppers, trade recipes, sauces and just enjoy talking about peppers with the other heads.
