Hello from the Fenlands

For those who don't know, the Fenlands are the sunniest area of England.

I've been growing chili peppers for two years now and experimenting with cooking hot sauces from my own harvest. And since I got a particular interesting tasting Habanero and a nice harvest of those too, I'm looking for ideas on how to keep flavour and bottle it until the next year's harvest.

Kind regards,

Quietdragon

Welcome from Romania!
I usually dry my peppers and grind them. If/when I made  sauce it was not intended to be preserved, so not much of help from me too.

Hello and Welcome.
I am new here also.  The only peppers I have tried to store are some cayennes and some Thai's.  Some have been dried and ground to use as a "shake" for food and the others are in the freezer frozen whole.  My wife and I have used some of the frozen ones and they taste as good as fresh so far.
