Hello from the Rio Grande Valley, Texas

Hi everyone. I'm Ken. In the initial stages of formulating some hot sauces, wing sauces, and pickling stuff. Trying to get the basic amount of pepper mash to vinegar/lemon or lime juice to salt ratio down to something I like. Not sure how sugar, primarily white, brown, or turbo effects it. Starting with sauce. But my love of hot wings started this all.
