Hello all,
My love of hot sauce has brought me to this lovely forum, and I'm glad that it has. I have a weakness for Jamaican Sauces (Grace, Eatons, Jonkanoo Walkerswood etc.), and also love Cholula - I could just drink the stuff. I'm looking forward to all that I'll learn here and in that vein I have a question for the pros and vets:
On the shelf or in the fridge? Where's the best way to store your sauces?
I've kept my sauces on the shelf in the past (or right by my chair more often), but I've heard that they should be in the fridge. What's the professional point of view?
