Hello From West Palm Beach

I have developed a pepper obsession in the form of hot jams, I am getting the feel of different peppers, I want HOT. I have been told my ghost pepper jam is not hot enough. Looking to learn and experiment. Thanks for allowing me to join

I use Carolina reapers in my jam, it does make it a little spicy.
The ratio of fruit to pods certainly affects the heat. l ilke the sweet with the kick of the hot bits. And Reapers are sweetish in flavour profile, so match well in a sugary jam IMHO.
 
WOW, Thanks for the welcome. @Needle99 that's great info. I happen to be trying to locate some reapers now.

Hey neighbor   just joined, we just moved here in Moore Haven,Fl.,from Texas ,bought a house now we got a yard! hot jams are super great,Im thinking I want to try makin some diff. relish, do you have any ideas for best peppers to use?
