Hello I'm Here!

Hi, I'm Dan! I just discovered this website through Reddit and I wish I had found it sooner!

I've been making my own hot sauce at home for a little over a year. Have come up with several recipes I'm happy with but I'm always looking to improve, learn best practices, and find better ingredients!

Hi, welcome!

What's you go-to recipe for hotsauce so far?
Here's one for you - Dill Pickle hot sauce:

Sautee the following over medium heat w/ 1 tbsp canola oil:
3/4 lb serranos
2 garlic cloves, sliced
About 1/4 of a big white onion, diced
1 bunch of fresh dill - about 1 packed cup. (Yes, it's a lot but it'll cook down)

Once everything start to soften, sprinkle some salt. I do about 7 turns on a pink salt grinder but you can use whatever.

Once the peppers have finished changing color/everything looks fully cooked, pour in:
1/4 cup white vinegar
1/4 cup water

Turn the heat to low and let everything simmer until most of the liquid has been absorbed.

Add everything to a jar + 1/4 cup apple cider vinegar. Put the jar in the fridge and let it sit overnight. (No idea if this step makes a big difference but it can't hurt)

Take the jar out of the fridge. Add all the ingredients to a blender, plus:
1 tsp salt
1 cup apple cider vinegar
1/2 cup white vinegar

And blend until smooth!
