I have grown Hungarian wax many times in the past. Generally, Hungarian wax fully matures to red, but is generally harvesting in the yellow state. These peppers, although they could be HW, are poorly grown or were harvest way before their time as may be evident by their green color. A nicely grown pepper in that variety is hardy questionable. The HW I have grown in the past were a moderate thick skinned carrot tapered pod from 6" to 9" long that maintain the yellow state for a considerable time before finally going red. seed count is also in accordance with that of a Hungarian wax pepper
