do you want to lower the pH reading which is increasing the acidity? is the acid already to high/sharp/toomuchbite which would be raising the pH-???


Short answer- if the pH is too high, add more acids... if the pH is lower than desires, add more sweets. Anything with natural ( or un-natural sugars) will raise the pH and sweeten the sauce.
 
I might have added too much lemon juice and apple cider vinegar. Ive bottled it and am letting it cool. I cant fix it at the moment. It might just have been due to temp. Ill report back.
 
Ok, so this was my first attempt at sauce. Which, had all the hiccups that you could imagine along the way..lol but I survived it. The first batch I accidentally used twice the amount of carrots required due to the fact that I don't have a scale and thought the bag I was pulling out of was a one pound bag, so I used half and later found out it was a two pound bag bahahahahahaa. (Is there a fix for this....aughhh oh well, it's already bottled up. It's not bad but the carrot flavor is too noticeable. Still tastes pretty good though!) Next go at it, when I get the MEASUREMENTS right, it will be perfect. Second sauce, the PH is too low. (bite) Which I will see how it is in the morning. Maybe I can heat up some sugar and olive oil or something and shake it up in the bottles?) Otherwise, when added to food, it is not that noticeable. In a tbs though, it has some bite...which coincidentally makes the hot feel hotter and last in the mouth longer?? I don't know that is what it seemed like to me, could just have been that through out the process I was consuming a lot of the sauce, checking it and what not lol. All in all it was and A+ experience. I checked the sauce section here and attempted TB's Habanero Pina and JaG's Habermelon. Thanks everyone for chiming in so quickly. My next batch is going to be leaps and bounds of improvement. (Have to get a few tools for the kitchen first, and find someone to help me eat all of these sauces so I can make more!)

BTDT! It sucks when you realize that you just boneheaded your sauce. I added enough other ingredients though so that I basically made a double batch and it was fine.

Just as there are foods that will lower the ph such as limes, there are also ones that will raise the ph. Carrots, potatoes and mushrooms are just a few that I know of and have used.
