Hi From North Carolina

I just joined here but I've been reading for a few years. I've learned a lot from the post here and will probably never buy hot suace again..
I really like to ferment my suace and have it raw, Nothing like the taste of fermened hot suace..
Getting ready to do a cayenne pepper suace with all my peppers from the garden...
Ilet mine ferment and age for about a year or more before bottling....
Thanks for having me here and hope to learn a lot more...
