Hi. I'm new to the spice world nd got a couple questions :)

I started eating spicy things about 6 months ago. First with jalepenos in food, then putting tapatio on my food. Now I'm buying hot ass sauces and putting habineros in my salsas.

I'm having an issue with the super hot hot sauces though. I bought mad dog 357 and Dave's ghost pepper naga. They claim to be 357000 an 650000 SHU but when I eat them as a sauce they are not that hot. I put some and cooked it with pizza and that seemed to activate the sauce.

So I'm wondering if I need to activate these sauces prior to putting them on my food. How do I activate them without cooking them with the food?

Second, no, there's really no "activating" the sauces. Some cooking might make the flavors pop, but hot is hot. If you're not finding them very hot, it just means you have a high tolerance. I'd suggest getting some sauce made with hotter peppers. I prefer to stay away from extract sauces because they lack in flavor. One of my favorites is Jimmy Scorpion sauce by Kneppers Peppers. Very hot, tastes and smells fantastic, and he's a regular here at The Hot Pepper. Dave's Insanity sauce is okay, but Jimmy Scorpion is better, in my opinion. But then again, being from Louisiana, I always look for flavor first.
 
there is no such thing as activating a sauce. i have noticed that depending on what you put your hot sauce on it can loose some of the heat. it also makes a big difference on how much you put on. do a little research on the sauce find out what type of pepper they use in it.  the fun part of it is trying many different types till you find the one you like. check the hot pepper awards forum they have some awesome ones on there. 
 
I can put it directly on my tongue and it will be only a little bit hot, but once I cook it into something then it becomes unbearably hot like I want it to be. I feel like I need to activate it
 
you're probably using a good bit more when you cook with it than when you put it on your tongue. Try eating a spoonful of it. It'll change your mind.

I had the same problem with my heat before I found THP. Now that I have found the heat in the hotter sauces and powders its all good.

And the others are right, there's no "activating" sauces as they'll contain all the heat they'll have, but cooking may change the flavor profile of it, or accentuate the heat.

Also, you'll find that even with fresh pods the heat can hit in different parts of the mouth. Not sure why that is, but it is. Some hit the tongue, some more the cheeks, some more the back of the throat. Could be you have a sauce that doesn't impact the tongue much.
 
Welcome. What makes it seem hotter is the temp of the food. Eat that same food cold and it should not be that hot. For instance. Eat a hot pepper and try to drink a cup of warm tea. You can't hardly drink it. Where moments before eating the pepper it was drinkable. Good luck on your quest for spice.
