Holy Jolokia

I bought a couple bottles of Holy Jalokia yesterday at the El Paso Airport gift shop. This morning I put a teaspoon full in a bowl of tortilla soup that had no other spices. I was surprised that the Jalokia was not as hot as Dave's Insanity Sauce, but it did make for a nice spicy bowl of soup. I can see that the intent of the sauce is to bring the flavor of the jalokia to the target (food), but not to set it on fire. I liked the flavor, but wish these sauces did not have so much vinegar. Nothing beats home grown sauces, and I can't wait to try Salsalady's creations.

Is it safe to assume you added it to the tortilla soup after the soup was cooked, just before eating it?

Yes. I saw my wife made some t. soup and knew it was not hot enough, so I added the Holy Jalokia after it was made. Today I added H. Jolokia to Rudy's BBQ Sause and it was fantastic.
 
I don't use sauces for cooking - usually tastes a little funny - lack of experience I guess. But, I've put MegaDeath in soup before and it not bad, very hot. I usually use pure powder (thai, habanero, cayenne) and fresh peppers, sometimes dried peppers. Pepper purees are good for adding while cooking too. The pure sources add the pepper flavor without the all the extra flavors in the sauce taking over too.

I'm with you on not using sauces for cooking - I also usually use powders, as I prefer being the one to determine the mix of each, rather than someone else trying to determine it for me. I'm also not a huge vinegar fan - it's okay, but just not at the top of my list. However, I bought my first puree a few weeks back (CA John's fatalii puree), and have used that kind of like a glaze (recipe on my profile.) It was quite good, so I've ordered some from AlabamaJack. Can't wait to get it in the mail!

Yeah, AJ's videos were porn enough for me to order 4 bottles. Okay, that plus the smell of roasting pork smeared with fatalii puree, garlic, smoked sea salt and rosemary is AMAZING. (Dinner last night.) I am really looking forward to getting those in the mail!
 
I can't wait to get mine either to give them a try. He says they keep forever in the frig after opening. :dance: :dance: Geeme, there's nothing better than roast pork.
 
Geeme, try some Calvin's 2.0 powder when you cook. The heat won't disappoint. See the discussion in the commercial products section.
 
Thanks for the pointer. I have to tell you, the heat in the pepper purees isn't disappointing, either!
