Holy S#@! Jalapeno

You never know with store bought jals. Sometimes they are bred for low heat and other times they are picked way too early for shipping and distribution. When I do get a real hot one it reminds me of what a jal should taste/burn like. One of the reaons I started growing pepper many years ago was so I could get good, hot, ripe jalapenos, although these days I seem to prefer growing fresnos which always seem to outperform my jals
 
Yeah, sometimes you can get some Jalas that can rip you with heat. Then again sometimes you find some that are eqivalent to bell peppers heatwise. When I find me some really hot ones I buy up a bunch, cut em into strips, and salt dry em. Then when I need to heat up some food, I just crush up a few strips and there it is. I tend to favor the Jala's that have the scars on em, they seem to be hotter.
