if any of you all are familiar with my posts you know im growing Datil peppers.. so far its the most unique flavor pepper ive tried.. the raw pepper almost has a creamy earthy flavor before it gets hot on your tongue..
made a new sauce/ base with them tonight just fooling around.. i wanted somthing i can add to soups, or other sauces that are not hot by nature but need that extra kick. This has citrus in it so not good for creme sauces, but great for any thing tomato or broth based. this would work great in any guac too.
1 large sweet onion
5 small ripe datils, with seeds and veins
5 cloves garlic
1/2 cup veggie stock
juice of 2 fresh limes
black pepper
salt
saute the onion and garlic until soft.. add a small pinch of salt and black pepper..
when soft, add the stock and cook 10 mins..
finely chop the datils
remove the sauce from the heat and let cool 2 mins then add the datils
cover and let sit 1 hr.
use blender or food processor to bring to smooth consistancy.
now you got Hot Base!!!
it just occured to me that this would make an insane base for a taco sauce!
