Yes Folks, that's right, I said it.
I am not sure how many other people use or make Hot Oils to cook with, but let me tell, you, they are terrific.
For those of you not familiar with Hot Oils, they are very simple to make. Take any sort of oil/fat (bacon fat, ghee, olive oil) that you like and heat it gently in a saucepan with crushed dried peppers (habs, 7-pot, tepin) for as long as needed, strain and use.
Once you use this spicy substitution, you will wonder why you have never used it before.
