Hot pepper flakes---what variety?

What sort of pepper is used to make the hot pepper flakes that you put on pizza, etc.?

Invariably, some sort of cayenne type. Would vary from manufacturer to manufacturer I would think.

I use thai insted of the chrushed red. Better heat and actually has flavor.

Most all of the companies get the dried pepper flakes from India and they can be birdseye, cayenne, or guntur sannam, etc. Depends on company, yes.
