Hot Sauce, cause Im a Dork

I found a recipe for sauce, said 2 cups vinegar, 2lbs peppers, a dash of salt, heat to boil and reduce to simmer, put in jars for 2 weeks then strain, sound ok?

Well I de-seeded the peppers and into the food processor they went. I let it run a bit longer than normal to try to mush them up some extra bit, but it was still kinda chunky, small as the processor will go.

I put the vinegar, peppers, salt and some minced garlic into a pan and brought it to a boil. After that I let it simmer for 10 minutes and tested the stirring stick for flavor, added some pancake syrup and a bit of sugar and allowed it to simmer 5 more minutes. It tasted good, but still a bit chunky.

Anyways, I put it in the jar and let the seal pop down on the lid, into the fridge for 2 weeks, gonna be a long time. Since I didnt weigh the peppers its probably not right for the recipe, but oh well, live, learn, sometimes fail, right? It says to strain it after 2 weeks, but could I run it through a blender to make it smoother and just not strain it? I have never made hot sauce before but I like messing around in the kitchen, since I have so many plants if its a fail, no biggie.
 
That recipe sounds like a joke. Seriously, like someone was just messing around posting it.

Forgot to add peppers I used:
6 Datil
3 Bhut Jolokia
6 Sweet Datil
2 dozen Caribbean Red Habaneros (approximately, there were alot in the bowl)
12 Orange Habaneros
3 Jalabaneros
 
That's a pretty basic recipe, but if you tasted it when cooking and it tastes good then it's a WIN.

In answer to your other question...
Yes, put it back in the processor when you take it out. Often, folks will food processor at the start just to get little chunks, makes it better for cooking, and the process again after it's all cooked up. Also, the longer you cook it, the softer the pieces will be.

Since you already took the seeds out, I would venture to guess one more trip through the chopper will suffice.

And keep it refrigerated from then on. Unless you have tested the pH level and you KNOW FOR SURE it is in the safe level, always refrigerate.

Im not done with this concotion yet. I am planning on opening the jar this week sometime, reheating it with some crushed pineapple them blending it smooth, should have a beautiful flavor with more kic to it than Jackie Chan. I will post pics when I recook it, maybe a taste test video as well.
