event Hot Sauce Class 2023

After a couple years off, the Making Hot Sauce 101 class is back! Today was a great class. Great participants, they made 9 products totalling over 200 units. Each took home 17 items. ~$120 value.

Haitian Pikliz
Spicy mustard, chipotle, beer, garlic agave
Blueberry red jalapeno jam
Peach, pineapple, fatalii sauce
Jamaican jerk marinade
Pumpkin, cranberry, sage sauce
Fire roasted tomato, garlic, onion sauce
Jalapeno seasoning salt
Tomatillp, jalapeno, pasilla, onion, garlic cumin, cilantro

This is a class done at the local grange hall. I supply all the ingredients and bottles. I give a talk, a condensed version of the HS 101 post here on THP, then everyone divides into teams to make the recipes.
Great fun!

Thanks GS. Wish i could take the show on the road...

The participants make and bottle the sauces from recipes i supply. Then they make up a name for it.

They named it "salamander sauce". Close! :lol:


It took the longest to make. First team to start, last team to finish.

Prep tomatillo, chiles, onions
Char with a propane torch
Roast in oven
Process in batches thru BlendTec
Ran out of large pots.....had to wait.....

It was a mom/son team that had been to the class before. They knew the ropes and rocked it out.

After Grass Snake's suggestion, i thought about a road show. Just cant see how that would work. I bring so much of my own stuff...2 BlendTec, ninja, funnels, pitchers, stock pots, measuring cups and spoons, bottles, spice shakers, plastic tubs, spices, peppers, shrink bands, heat gun, info papers and recipes, plus a selection of sauces from my refer and collection for samples.

Arriving for the class, my 4runner was full front seat and back. After the class, it was only Half full. :lol:

Forgot to mention, there were 12 participants, 2 were repeats and 10 were new. A great group. The repeats were a mom and son who had taken the class when the guy was around 15yo. He still has the interest several years later. Love it!

That would be a heck of a tax write-off... :lol: but it would be a great way to write off an rv trip across the country.

Trust me, I hear ya! 😂 I know exactly what that’s like, from catering BBQ for parties of 200+ people as a “One Man Band” :lol:

Charcoal, cutting boards, Sterno trays and racks, insulated Cambro boxes, knives, rubs, sauces, plates, napkins, paper towels, etc. Not to mention bringing multiple smokers and several large coolers, filled with hundreds of pounds of meat! All in the 6.5’ bed of my pickup truck 😉

You end up looking like the Clampetts moving across the country… :rofl:
 
The Clampetts! My mom loved that show....

I can visualize that with smokers and coolers.
 
I missed that about going international. Maybe in a couple years...

Serious tax deduction!!!!
