Hot Sauce in and out of refrigerator for long periods of time

Seeking opinions on this....I know with some food items, it is not okay to thaw something out from the freezer, and then re-freeze them.  I'm curious if there are any similar rules with hot sauces and refrigerating them.
 
I made a batch of 100 5 oz bottles and bottled them via hot fill method.  I then put them in the refrigerator for about 3 days as I designed a new label.  Once I get my labels finished, I took them all out, wiped them down and waited until they were room temperature. I put the labels on all of them and then put them BACK into the fridge.  
 
If the sauces are in and out of the refrigerator for long days at a time does it affect them in any way? Should I keep them at one temperature before opening? Thanks for the advice.
 
Why are you putting HFH processed sauces in the refrigerator? That's the point of HFH....shelf stable....aka-no refrigeration needed...???
 
I guess I have just heard that even if it is 'shelf stable' it keeps better color, flavor and preserved even longer if in the refrigerator.  I'm just overly cautious I think. I talked to a friend on the phone today who said he never refrigerates my sauce, even after opening, for weeks at a time, and it still keeps well.  Just thought I'd ask.
 
Keep the bottled sauces in a cool dark place....such as...in the cardboard box and in a cool closet or similar...this will save the color. Flavor shouldnt change once it is sealed.

And if your sauce is really freaking awesome, you wont have to worry about long term preservation. It should be so good customers eat it a bottle per sitting and you will be selling it faster than you can make it. There you go! Nothing to worry about!
