hot-sauce Hot Sauce - Open Bottles shelf-time

Hey guys,

I need your help,

I've got a 2 bottles of hot sauce;

1st is Dave's Ultimate Insanity
2nd DA'Bomb Ground Zero

Both of the bottles was opened 8 months ago,

The bottles was stored (closed) on a cool, dark and dry closet.

so, the sauces are still eateable? they are good or bad?

I cant say by the smell and afraid to taste ;]

Thanks.

(disclaimer: if you take my advice and die its not my fault)

If the sauce is vinegar based and properly sterilized when it was bottled, then it should be fine.  I have bottles well over a year old sitting on my counter that I use.  Never been sick.

I think they would be ok... but whether or not they are edible is a different question entirely.  Both of those are extract sauces.  Take Husker's advice, and try some Lucky Dog.  If you need more heat, add some Pure Evil.  It won't alter the flavor, and you won't have to deal with that metallic/bitter extract taste.  :)  Granted, this is just my opinion...

I think they're both Zombie Apocalypse-proof, don't think it would ever go bad.  :lol:  They're not particularly good tasting sauces to start with, but I don't think they'd be spoiled.

I have had some fruit-based sauces (professionally packed sauces, not home made) go bad after a couple years.  I think they were in the fridge for 3 years....But that's not the norm around here.  Despite how they originally smelled, you should be able to get a whiff of something "off" if they had tanked.
