Hot sauce trading

Id be in but, and dont take this personal, i do everything i can to make my sauces with the best food handling practices i can at home especially if im giving them away. Especially my shelf stable sauces.
 
That being said lets continue this discussion and im all about it!
 
I agree, I take great care in the cleanliness of my kitchen and utensils when I prepare my sauces, sanitize like crazy, because I know I intend on keeping my sauces for a long time and I gift them to my friends and family. The last thing I want is to make somebody ill. I also make sure to use enough vinegar to raise the ph and store my sauces in air tight jars directly from boiling to canning and into the refrigerator.

I think it would be nescessary also to send ass list of ingredients with shit sauce.
Star san is a great sanitizer but im pretty sure it cant deal with botulism which is the real concern here. Ph and temp is where we need to focus in my opinion.

I dont use vinegar in mine.is it necessary? That being said, made a batch of my deadly salsa last week. Jarred and ready to go. Interested in a trade
 
I have traded hot sauce for seeds,pods and plants but never hot sauce. I do agree with all the cleanliness issues. It's kinda like making beer. I stick to reliable and tested recipes so all goes well. I have taken salsa lady's tip and switched to 10 oz. Woozy bottles. ( they last a bit longer in the fridge and less material to clean ) I did receive a small sample from her and if it is possible to reopen,reheat and rebottle and seal in sample size bottles I'd be up for some trades. If not I'd have to wait for this years harvest and make some small ones.

I have been watching this thread for a while, and guess I'm a little confused.  It seems to be the common theme on here that everyone is "scared" to try someone elses sauce for fear of the unknown and not coming from a kitchen that has passed USDA inspections or whatever. But then I look at the "pepper people are the best" thread and there are instance on there where people are sending hot sauce and other canned goods to others as gifts.  All happy to recieve them.  Im not really seeing the disconnect. Its fine to give away but not fine to trade? Am I missing something?
 
Sad, we have really become a society of gunshy folks havent we. Looking at some of the threads in the hot sauce recipes I would be more than happy to recieve some of what they are cookin up.  I believe that anyone who participates in this would not only have tasted/eaten the sauce for themselves but would also only send me their best sauce they have to offer, least thats what id do. 
 
Maybe a few guidelines would help jumpstart this: 
1. Post a step by step process of you making your sauce, include picture of final product
2. Post must contain 100% of ingrediant list (quantity is optional)
3. All sauces must be in _____________containers--(I'd say canning jar, woozys are not available to everyone)
4. To particpate must be member for XX time or XX posts
5. PH must be XX or below
6. ?? 
7. ??

I make 3-6 wozzy bottles every weekend just to try and perfect a new sauce and give most away every Monday just for feedback at work....My PH is 3.3- 3.8 and I use to own two restaurants so cleanliness is my best friend. The trade part is fine. I dont see how thats a problem at all. I like the guide line ideas beer breath.
 
Its just that if people dont follow ph and good handling practices i dont the anybody deserves to get sick. If youve ever had food poisoning its absolutely horible.
 
Maybe pics of ph meter reading and package temp would be good
 
Hobby Sauces are an Eat-At-Your-Own-Risk proposition.  Since they are not licensed, there is no way to know whether they are safe or not other than making educated guesses based on posted recipes, pictures etc.  All those who receive hobby sauces as gifts or whatever in the PepperPeople thread have the choice to eat them or not.  They may post a "thanks for the box including sauce" but whether or not it's ever actually eaten...we don't know.  I know someone who received a free bottle of hobby sauce that PFFFTTT'ed out like a pop bottle when they opened it, so that bottle got pitched.   
 
 
Most hobby saucers don't have pH meters.  A lot can be determined from a complete recipe, but if someone is in the Hobby phase with intentions to go Legit, they will not want to publically post a recipe with ingredient measurements.
 
Woozies are cheaper to mail than 8oz canning jars, and the HWB/HotFillHold methods are similar, but it's up to what the Hobby-ist has or can find.  There are several no-minimum bottle companies.  But some sauces are thicker/chunkier and would do better in canning jars instead of woozy bottles.

I'd suggest -either-
 
someone who has some hobby sauces to trade start a thread offering to trade with other hobby saucers.  Actual connections/trades should be done via private PM.  No money should change hands including compensating for addition shipping charges for larger bottles.  It HAS to be a No-Money transaction. 
 
A person could post their Hobby Sauce with descriptions, pics, etc and those interested could PM with offers to trade.  Those interested would "hook-up" in PM and they could accept or decline the offer to trade.

each individual who has a sauce to trade post it somewhere.  I don't know where, as the THP forum in general is pretty good about not supporting illegally produced sauces being sold (which hobby sauces are not)  but still...I don't know what The Boss's stance is on this topic.
 
 
 
 
 
Most hot sauce producers start out as hobby saucers.  It's a huge step in the process if someone wants to take it up a notch, and there are also tons of fantastic sauces being made by people who just like messing about in the kitchen and want to share.  Just so long as everyone knows they assume the risk to eat-or-not-eat and no money is involved. 
 
For those hobby saucers who are looking to go Pro, there's ways to get your sauces out for feedback from serious sauce fanatics and foodies.  There've been other posts about this and several folks who have sent out samples for feedback.
