Hot sauce

Thank you Pepp3rFreak for the peppers.

Peppers cut in half
1/2 c Chopped onion
8-12 Cloves garlic, minced
2 TSP salt
1/2 c Chopped carrots
1 c Vinegar
1 c Water
1/4 c Lemon juice

Decided to cut it short. Everything right in the blender.

Then to the sauce pan

30 minutes simmering and into the half pint ball jars. Then into a hot water bath. Also filled a woozie for Pepp3rFreak.

Breathing in the kitchen was hard for the family. I thought it smelled good.
 
Looks very nice. Why the hot water bath? Also, how was the heat and flavour?

You have to get the contents really hot before sealing the lids. (It also helps to sterilize the hardware) When the contents cools, the air above it contracts and pulls the lid down.....which creates the seal that allows you to store it at room temps.
 
I have yet to try this batch. Letting it age. When I was cooking it down I tried it and the heat was ^@#^3^#^@#@!!!! and the flavor was good until the heat over took it. I gave a woozie full to Pepp3rfreak so I will have to ask him what he thinks once it is chilled.

I'm not the best reviewer in the house so I'll just say the sauce turned out pretty good! I'm a big fan of the garlic for sure and this rocked it but unfortunately I'm a little biased as I prefer my own receipts and like it much hotter. One thing I'd suggest is to not use water, there's no need for it as the veggies provide enough, the sauce was thinner then a coke whore and separated like my money at a casino. :rofl: Keep cookin Justaguy, experimentation is fun and you'll get better with every batch!
