top with aged rice wine vinegar
wait...

good for dim-sum, greens, or anywhere you want a little sweet-sour-hot kick

There is more vinegar than everything else combined so I don't see any need to refrigerate. That batch has been sitting out for about 10 days now and there is no sign whatsoever of spoilage. Also, I picked out a couple of the peppers and ate them with my dinner yesterday, they are really soft from the acid breaking them down, yum!
