Hotter Than Pickle Juice "Trinidad Chocolate Moruga Sauce"

Approximately 2lbs of Trinidad Chocolate Morugas.
1 large yellow Onion
3 medium cloves of garlic
3/4 cut apple cider vinegar
4 tablespoons Blue Bonnet Margarine (for the oil)
1 quart orange juice
 
Wash and rinse peppers. I use a stock pot so I can guage how much water I need for the next step.
In same stock pot, fill with enough water to cover the peppers. (do not add peppers yet) Bring water to a boil. Now add peppers and turn off heat.
Let soak for 4 or 5 minutes, and drain.
With peppers in pot add apple cider vinegar and just enough orange juice to cover peppers.
Let sit overnight. I placeed pot on 3 season porch, as the aroma became very intense!
Brown diced onion and minced garlic in frying pan with margarine, and pour in crock pot
Move peppers to ninja blender and puree. After final puree, Used 1 cup of orange juice on blender to rinse blender out.
Puree was placed in crock pot on high for 5 hours.
Placed a colander lined with cheese cloth double layered, over original stock pot and pour contents of crock pot through it.
Let drain for 20 to 30 minutes. Again, placed on 3 season porch for intense aroma. My eyes were on fire.
Move remaining solids to a glass bowel and dispose of stained cheesecloth.
Take solids from bowel and place back in to blender with approximately 1/2 cup of orange juice, and puree until mostly liquid again.
Pour liquid from stock pot back in crock pot
Pour blender items back in crock pot
Rinse blender with remaining orange juice.
Set crock pot to high for 3 to 4 hours.
While waiting on crock pot boil jars and bottles  in stock pot for 15 to 20 minutes, place in oven on cookie cooling racks at 300 degrees.
Microwave 2 cups of water, and add canning lids to it to soften seals just before filling.
Fill jars and bottle while still hot, leaving approximately 3/4" of headspace, cap immediately
I got this canning method from grandma, she used it for high acidic sauces she made.
I have used it for the past 3 years and no problems.
Enjoy, and do not make my mistake and sample sauce straight from the crock pot, it took my throat a week to recover.
