I smoked some JPGS in my little WSM a couple years ago. I used a fuse-style pellet holder with pecan pellets and kept the temperature below 100°F for about four hours. Then into the dehydrator. It made a very nice powder.

Anyway I just did the same ol' thing with my last batch. Half apple wood and half cherry, 140°f for an hour. They turned out great.

I figured there would be more discussion on this subject as well.
I've only smoked peppers a couple of times, but they always turned out well.
I did it on a converted Smokey Joe with Peach wood chunks (my personal favorite). I only smoke them for 2-3 hours with the temps around 215F. Then I put them into a dehydrator until they are completely dried out.
#1 is Orange Spice Jalapenos, #2, #3, #4 are assorted jalapenos(Biker Billy, Emerald Fire, & Mucho Nacho) plus some Cherry Bombs and also some Sugar Rush Peach, #5 is just Biker Billy Jalapenos, #6 is assorted sweet peppers, #7 is blended Cherry Bombs, and #8 is blended tomatoes. Probably 18 to 20 pounds total.
