How long should it last

Hello All ,

I made a boat load of pepper sauce several years ago. Mainly Cider Vinegar ,Habaneros , a little sugar to keep it from tasting like peppered vinegar , a few carrots and garlic . It's dang hot !! You only use a few splashes.

My stomach is as tough as GI boots so little bothers me. But am I putting others at risk when I put that on the table? I keep it in refrigerator.

Im no expert but a couple of years seems like a long time to me.
Why not just make a new batch to be safe? I know you would kick yourself if you made someone sick.
More experienced members will be able to help you more i imagine.

Anything you create yourself that you have not tested for safety and preserved, you need to treat as fresh (something that will spoil), just as if you made some pasta sauce. CHUCK IT!

PS. Years? Even commercial stuff should be chucked after about a year. It is preserved for shelf life, but once opened, it will spoil or just get nasty.
