How to tell when mystery peppers are ripe?

I have two pretty big sweet peppers on my plant and dont know what color they ripen to. If they happen to ripen to green how will i know when they are ready to pick?

Off the top of my head, Green Habanero and T. Scorpion Green.
I guess that would be stays green. I think.

I thought Jalapenos ripened to green, as that`s what colour they are in the store........................................... just joking!

I was being silly, Jals turn red when ripe and most green peppers are not ripe and will turn a final color.

what if the stem turn yellow as a result of pepper maggots?

If they taste good green I don't consider them unripe, just not fully ripened, and they will just get sweeter, so pick them where you like them. Most people prefer green jalapenos for example.
 
I find fully ripened bananas disgusting, but I love bananas yellow with a hint of green on the edges and not one brown spot.
