I'm seriously burning lol I ended up putting in 3 large Dorsets, a whole jar of jalapenos and used extra hot salsa for the topping

So basically you put the Tortillas in with a generous coating of refried beans. Then you add a layer of pan fried sweet potato along with a generous amount of corn, a small amount of cooked spinach, jalapeños, some cheese and Dorsets (which is a must!!!!!!)
I made 4-5 layers and then put the last whole grain Tortilla upside down with the beans facing down. Then on top add the salsa, lots of cheese and a generous amount of pumpkin seeds.
Put it in the oven for at least 25mins at 180c note the C
You know Timmy, I'm sitting here at work eating a stinking subway sandwich and staring at that awesome creation. That looks great mate, love the pumpkin seeds on top....mmmm.

That ones a bit fiddly but if you add all of the ingredients and try to dry off everything you add in then this is a great dish. I've made it four or five times and I've had a few flopps but this one was perfect.
Other than all the prep work its pretty simple. Putting the fillings all the way to the edge seems to be a bit tricky but I guess a smaller dish would have helped.

The only thing I might add.............is to stack the tortilla layers in a round baking pan.....I'm thinking Corning Ware or similar....round dish for round ingredients................But I'd totally scarf the stuff in the square dish in a heartbeat!!!
I added in some coriander, turmeric, cumin, paprika, my superhot mix, 3 red peppers that look like bonnets lol, red capsicum and the other stuff you can see in the pic
In the bottom of the bowl I added some microwaved chickpeas and some uncooked slices of tomato.
Yum yum. It filled me up and I couldn't even get through half of it.
First off add chopped up onions, some bhuts 2 and garlic into a pan and cook down. Then add the mushrooms and let them sweat for a while, say 1-2 mins.
Then add in around half a cup of wine, veg stock and 150-300mls of cream depending on your weight loss program. Bring to nice simmer then leave for 5-10 mins while you get the pasta going.
After 10 mins add chopped sun dried tomatoes, pine nuts and asparagus (can sub green beens)
In the last minute or two before pulling off the heat mix in 1 egg into some of the liquid taken from the pan. Mix back into the pan and remove the mix from the heat once its thickened.
