Thanks for the incredibly thorough and thoughtful review! 
Black is my favorite of my sauces - partly because it took the most prototypes to get right (over 20) and that was mostly due to the bitterness of the Scorpion pepper, I love the floral flavor and it was very difficult to amplify that while muting the bitterness. Since I spent so much time with it, it's a sauce I'm very proud of.
Super versatile sauce, but especially great on seafood. Since you're in Japan that should be easy! Oysters, snapper, salmon - yum. Also beef, chicken, pizza, etc.
