I think you nailed this one entirely - the sauce is very versatile, and tends to adapt to what you use it on.
On pork, the fruit notes open up tremendously - especially pulled pork, pork chops or carnitas (a Mexican style braised pork). On chicken or burgers, you get more habanero/applewood notes.
