food In the Kitchen and Winging It

Decided to do up some Wings today, did three flavors with one being a
Spicy Habanero sauce.
 
I like mine super crunchy so I use a double dredge method and deep fry.
 
Dredge 9.5lbs of wings in corn starch
 
Dredge in seasoned whisked eggs
6 eggs
1.5t each salt, pepper, granulated garlic and onion
 
And dredge again in seasoned flour mix
2c flour
3/4c corn starch
1T each salt, pepper, granulated garlic and onion and paprika
 
Deep fry at 375° for 10 minutes, minimum 185° on the bone.

I had one pic of two trays of breaded wings waiting for their turn in the fryer, sorry it didn't make the cut.
Imagine the Kirkland Party Wings sold in six bag packs, I bought the heaviest in the display, prepped and cooked all six packages.

My husband is not a fan of wings, at all.  Or even any kind of chicken on the bone.  He had to do some electrical work in one of the many chicken processing plants in Skagit county back in the early 90's, and it set him off chicken for years.  Literally would not eat chicken for years.  Eventually he came around to eating boneless meats.  I don't blame him.  I've never been inside a plant like that.  It may have been the smell on top of the visual, but whatever it was, it was bad.
 
So, No Wings for him!  Maybe one or two, but that's about it.  I usually have some chicken tenders that I bread up and cook for him.  That usually does okay.  For Evan's 16th birthday, he and his 2 buddies polished off 2 bags of wing pieces in 3 different sauces.  I think they were 5# bags...can't remember.  That was a fun afternoon.  I only had a small dutch oven on the BBQ grill burner, so I was cooking 6-8 pieces at a time.
 
and then there was the time at the september chileheads camping weekend that I forgot the large stockpot and ended up cooking (lots of pounds) of wings in a 6" deep 1/2 size hotel pan.  That took for-EVER!
 
OK, I'm done rambling, looking forward to more WANGS! 
 
I've been inside both production and processing of chickens and pigs, I don't know which is worse on a hot day.
Both stink to high heaven and are just gross.
Commercial farming/processing of any animal isn't pretty, a lot of people would be put off their normal proteins if they were face to face with it.
Me, meh, is what it is and what simply has to be done to keep the stores stocked and population fed.
I'm a hardcore omnivore and like my meat, if I can't buy it in a store I'm fully capable of seeking it out, killing and butchering it myself.
