This pickle is incredible ! Definitely one of my favourites although I don't make it very often for a few reasons, it's more addictive then Heisenbergs crystal meth prawns are quite an expensive ingredient and everyone eats it fast ! So it doesn't last long
INGREDIENTS :
1/2 or 1lb of cleaned shelled prawns (smaller works better or chop up big fellas)
30 dried mild red chillies (ground to powder)
1 TBSP cumin seed (ground powder)
15 -20 garlic cloves (finely chopped)
100 ml white vingar
3 to 6 TBSP oil seed rape oil or Mustard oil
1 1/2 TSP sea salt
METHOD:
1. Mix All the ingredients to make a paste ( except the prawns )
2. Add to pan and gently bring to a simmer untill the oil separates
3. Add the prawns stir in and simmer till cooked (not long)
Add to small sterilised jars, you can eat it straight away but like all Indian pickles best left for a couple of weeks to age and improve
