I have a bunch of Indonesian peppers I grew for a friend's wife and have extras. I decided I am going to make a small 2 or 3 bottle batch of sauce for her and him. If I had 1 cup lemon or lime juice per 1.5 cup of pureed pepper should my pH be ok?

1.5 cup pureed indonesians (they stop screaming once you puree them)
1 cup lemon/lime juice mix
0.25 cup white vinegar
2 TBS brown sugar
0.25 cup shredded carrot
