Is there a sauce maker in the STATES that can give the guys in Australia a run for their money?

This question isnt to knock anyone in the States that makes a hot sauce, or makes a GOOD hot sauce. It just seems like, in general, all of the REALLY good sauces come from Australia.
I would say, from the States, the best sauce I have had is the Piney Hab by Justaguy. Yup, WAY better than Blair's stuff, no offense Blair!
As far as a "traditional" wing sauce, States or anywhere else, I would have to give it to DEFCON, obviously.
Can anyone "answer the call?"
 
There are lots of good sauce makers around Sean just don't think you know all that it takes to put together a hot sauce. Since you seem to have a good recipe and lots of free peppers why don't you order some bottles and design a label, find a commercial kitchen to use and set up your own LLC. I spend all year growing peppers and them all these other hurdles only to have the USPS profit $10.70 everytime I send somebdy some hot sauce. If it wasn't for the high shipping costs I'm sure more would share their favorite sauces. Getting ready to make the next installment of the Brain Strain hot sauce maybe you can try.
 
I personally like all kinds of sauces from all around the world. One thing that I've noticed is that a lot of Aussie sauce makers choose to thicken their sauces with xanthan gum instead of cooking down their sauces. I think this method can give a fresher pepper flavor, where cooking down may blend ingredients more.
 
It's all a matter of personal preference. I think individuals make the best sauces in the world. Individuals who make sauces for personal use have no rules or regulations to follow and don't have to add ingredients (like vinegar) to meet certain requirements, unless they want to. My family, friends, and coworkers rave about how they think I make some of the best sauces/salsa they ever had. I would never sell it because that would require me to mess it up with ingredients that would screw up the taste. The best sauces made are the ones you make (if you have that passion). Of course, I could be wrong.
 
True, I do make my own. I like my sauce, but still pull out OTHER'S sauces before I'll use my own. I dunno, I guess Im kinda weird like that. I think Neil is the same way....doesn't even review his own sauces.
And again, this thread isnt to talk crap to US sauce makers/sellers. (Well, ANY sauce makers really.) It just seems like the Aussie's, as a whole, make a better sauce.

Hey Poop. Have you tried Salsalady's sauces? Her Ghost Fire Sauce and her spicy BBQ Sauce are some of the best I have come across. I'm no expert, but those just blew me away.

Everyone is most likely to think THEIR sauces are the best ever. Its getting them out there for all to taste that determines whats good and what isnt.
All-in-all, its good fun for tons of people to make sauces and to try them all. Its how things evolve. Sauces, no matter WHERE they are from, can do nothing but get better.

idont use xanthan gum but there may be some who do i found when i first started i did but now i dont use it at all i;ll say one thing im not a fan of a extract sauce i like all natural

an alternative to xanthan gum is Arrow Root powder...works wonders without impacting taste..you just have to make sure you disolve it first before adding it in...if I don't it clumps on me...

I think one of the THP reviewers should chime in here...they get to test all the sauces...hey guys...heads up...where's JayT?

As you very well know, there's lots of sauce types and I wouldn't try to compare Cappy's Brain Strain to DuvallDave's Sweet Spicy Girl. Both awesome sauces, but not "apples-to-apples".

There are TRILLIONS of yummy recipes for everything under the sun that are made in homes around the world. But translating those home recipes to a commercial venture is a whole other story! Each time the homesaucemaker makes the "recipe" it might be slightly different, and that is not acceptable in a commercial venture.

Personally, I don't want to get involved in an international hot sauce competition at an internet forum level unless it is on a site-sponsored event. I know you like hot stuff, just not sure where this is coming from.

Its not anything like THAT, SL. Just kinda got to thinking after seeing Neil's Pain2 by Alpha. That review REALLY made me want some! (I guess thats what the videos are for! lol) Then I was like "CRAP! Yet ANOTHER kick ass sauce from Oz." Then got to thinking that it seems like a LOT of the "good" sauces come from Oz.
Like I said before, this thread isnt to talk crap about anyone anywhere really. But, when you ask a lot of people what hot sauce they would most likely like to try, or have, the say Skobiyan, Turkey Slap, Hot Chocolate, etc. Which sucks, because it costs $30 to get those sauces over here. And again, Im not saying that sauces here in the States suck. Dont get me wrong, I HAVE had good sauce from here in the States. I am eating the CRAP out of Justaguy's Piney Hab! (Had some on that new dip bites pizza thing at Pizza Hut last night.) Just in MY opinion, it seems like we dont have as MANY good sauce makers in the States as we do in Australia.

This site needs reviewers who don't have preconceived notions of which country or people are making a hot sauce that you endorse Sean. Keep spending all your hard earned money on shipping from your friends down under, there are plenty of great hot sauces here in the USA and we don't need your reviews to sell our concoctions for half that price. Don't know how anybody can take you serious when you diss other hot sauces before even trying them. Sorry you spent so much on shipping hope that tasted good to you. I sell plenty of Brain Strain hot sauce without you putting any on your baby spoon big guy. Pain2 from Bentalphanerd is one of the first hobby sauces to shared on this site long before you showed up, only Neil's video is new.
