Jar size

One question that popped into my head... What size of jar would be best for bottling & selling hot sauces? I'm still a way's off from actually doing any bottling, seeing as my pepper plants are still WAY too young to be producing anything for at least another 6-8 weeks minimum.

There's a couple of websites I've found that sell jars wholesale, but it would of course help if I knew which size would generally be the recommended size first.

OK, to rephrase...

Besides the standard 5oz hot sauces, what other sizes are the usual sizes you folks have seen hot sauce sold in...

One thing I stumbled across was a good recipe for honey barbecue sauce, so I'm going to give it a sadistic twit by including some of the peppers I'm growing, just to see how it tastes... when I have some ripe peppers, that is :)
 
If it's just for yu personal use or to give to friends and family, go to the store and find a cheap bottle of sauce, I get one for 69 cents a bottle pop teh reducer off, dump it then strip the label, clean and steralize the bottles and refil with my good stuff. You mentioned selling so, your probably going to have to use new woozies. Check the regulations for bottling and selling in your state.

Way ahead of you RM. In FL, there's a law that allows people who sell under a certain amount to bottle things in their kitchen. Once you get above that, you do have to go to a professional bottler and/or commercial kitchen. But chances are, if I get to that amount in sales, I'd need to get a professional bottler and commercial kitchen anyway.

The law itself was designed to help kickstart small, home-grown businesses, which is kinda nice.

Actually, RocketMan pointed out something to me. Products made from mostly veggies (ie salsa, hot sauces, etc.) and that have a low pH aren't covered under the law and require special storage and kitchen stuff. Things like cakes, baked goods (breads, pies, etc.), are covered under the law, and people can do them in the kitchen to their heart's content.

So essentially, if I wanna make any hot sauces, barbecue sauces, and/or salsas, I'd have to restrict it to friends & family first, using them to test it out and get my recipe right, since some people in my D&D group love sauces, and the hotter, the better, and not do any "commercial" cooking of my stuff unless I rent out a commercial kitchen.

I did some searches on Google, and there's no shortage of commercial kitchens that can be rented out, complete with equipment & storage etc. The rates I've seen are actually WAY better than I thought they'd be. I had the thought in my head that I'd have to dump several thousand bucks just for them to even talk to me, but there's one in my area open 24/7 that I can rent for $630 a month (equipment & utilities included), for up to 20 hours a month, and make my stuff. They even offer cold storage for a nominal fee, less than my pizza budget every month. You can even go on their website and block off time just for yourself, so nobody else can be there to do other stuff.

But of course, it would help if I could get step 1 completed.... cultivate superhots to actually make the sauce :)
