Just made my first test batch for a sauce I want to bottle

Being as I make alcohol for a living, I should probably be fermenting sauces as opposed to boiling them, but hey, I have to wait forever for my beer to be finished, i dont want to wait for my sauce to be finished

so

I am a huge fan of cilantro/lime/hab sauces, and I love them on tex mex food, so I decided to whip together a combination sauce so I can just throw it on whatever I want

Base was water and tomato paste for the first half. Simmered in a sauce pan with Cumin, Red Chili Powder, smoked paprika, and fresh cracked pepper

the other half of the sauce was done in a food processor, which was the juice of one lime, 2 habaneros deseeded, like an 8th of a small sweet onion, and fresh cilantro. At the very last minute I decided to break into my huge supply of spices and herbs that I use for brewing, and grabbed myself some curacao orange peel, rehydrated it in a tiny hot water for 3 minutes, and strained the "orange water" into the food processor as well.

Blended that all to a paste, no chunks at all, poured it into the simmering tomato base sauce, and then let the entire thing thicken for about 20 minutes

Sterilized an old bottle of RocketMans That Green Stuff, tossed the sauce in there, and bam, now I have some test sauce to see if I want to make this in a large enough batch to fill a 32oz jug of it

being the drunk that I am, i have been drinking since 11am and completely disregarded the picture taking process until the end

well now that its cool, i just threw it on some triscuits

it came out EXACTLY like I wanted it to

so yea, I will be making this on a larger scale

for you guys coming down on April 13th to the brewery, ill bring some with me
